A classic favorite all year round that tastes like summer. Ah, yes. There’s nothing quite like homemade strawberry goat milk yogurt topped with granola or muesli and fresh strawberries. Best served taking in the morning sunshine, this creamy treat will delight your taste buds and nourish your body – it’ll have you wishin’ you made more!
9 cups Whole Goat Milk, OR (2 1/4 cup whole goat milk powder combined with 6 3/4 cup water)
1 tablespoon yogurt starter or 1/2 cup yogurt with active live cultures
2 cups fresh organic strawberries
1 tsp turbinado sugar
1/4 cup water
Honey or maple syrup to taste
You will need a yogurt maker for this recipe.
In a large saucepan gently heat the goat milk (or goat milk powder combined with water) until it starts to steam. Quickly remove from heat and let the milk cool to room temperature.
In a bowl, whisk together the starter or yogurt with approximately 1/4 cup of the lukewarm goat milk until smooth. Then you can add this into the saucepan with the rest of the milk, continuing to whisk until smooth.
Transfer your saucepan contents to a measuring jar or bowl and pour evenly into seven separate 7-ounce yogurt jars. Place these jars in the base of the yogurt maker and cover with the machine’s lid. Plug in the yogurt maker and set the timer for 7 to 8 hours, depending on how firm you like your yogurt.
Once the yogurt is set, place the lids tightly onto the jars and refrigerate them for at least 3 hours.
Combine the fresh strawberries, sugar, and your 1/4 cup of water into a small saucepan. Over medium heat bring this to a boil. Cover and decrease the heat to low. Simmer for 5 minutes. Mash the strawberries and strain it through a fine mesh sieve. Set aside to cool and then cover and refrigerate.
Once the yogurt is chilled, stir in a few spoonfuls of the fruit puree and add honey/maple syrup to taste. Top with fresh strawberries and serve!
