Treat your friends and family to homemade cupcakes.
430 g butter, Softened
200 g granulated Sugar
3 large eggs
3 tsp vanilla extract
125 g flour
¼ tsp salt
2 tsp baking powder
380 g icing sugar
zest from half of a lemon
1 heaping tbsp of Goat Milk Powder
6 tbsp water
Preparation – cupcakes
Mix together goat milk powder and water, set to the side.
Mix together 200 g butter and the granulated sugar.
Add in 1 egg at a time, then add in 1 tsp of vanilla extract.
In separate bowl mix together flour, baking soda, and salt. Fold flour/baking soda/salt mix into butter/sugar/egg mixture. Don’t overmix. Add in a few tbsp of goat milk mixture to loosen up if necessary.
Pour batter into lined cupcake tray. Bake at 180°C (convection oven) for 15-20 minutes.
Once done baking, let cupcakes cool completely.
Preparation – icing
Cream butter in a bowl, then slowly add in icing sugar. Mix for 2 minutes.
Beat mixture together, add in lemon zest, and remaining vanilla extract for 2-3 minutes. Then add in 2-3 tbsp of goat milk to give it that extra creaminess.
Pipe icing onto cooled cupcakes. Top with your favourites. Enjoy!
